In the Vineyard
This was the fourth harvest from a Shiraz block on La Vigne Estate, SH9 clone on R99 and USVIT 8-7 rootstocks in a north-west facing slope with red, rocky and well drained soil. The vines are on a 5 wire vertical trellis system with moveable foliage wires.Early morning harvesting in 6 batches at between 24.5 and 25.5º Balling. Handpicked into 20 kg lug boxes. Yield; 3.9 ton per Ha.
In the Cellar
Destemmed by hand into a 1800 l wooden tank and open fermenters. Partly natural yeast.
30% new French oak and 5% new American oak.
Wine matured in barrels for 18 months to classical music and with rackings every six months.
Wine bottled by hand, unfiltered and unfined
Tasting Notes
An elegant peppery nose with ripe mulberry and white chocolate. Black berries, plums and white chocolate with ripe tannins on the palate showing a well balanced wine with a smooth finish. Would show its full potential by being enjoyed in a Shiraz glass, at a serving temperature of 18ºC and accompanied by classical music.
